At Von’s RoastHouse — a Seattle dining mainstay for decades — highest quality meats including prime rib and whole chickens are slowly cooked in full view to the world outside.
Viands at Von’s are roasted in the restaurant’s unique Radiant Roaster, a large glass-windowed oven facing outward onto the restaurant’s patio and Pine Street.
Inside the unique oven, beef and bird rotate slowly suspended on chains in a continual bath of infrared and visible light emitted from controlled but intense light bulbs.
The ruby-hued wavelengths tenderly cook the meats internally while imparting a savory browned surface on the outside.
It’s fascinating to watch the glowing Radiant Roaster and delectable to enjoy what it produces.
