So Good: Pat’s Smokey BBQ Meatloaf
Meatloaf gets short shrift.
It might be quickly assembled and conveniently cooked, but it can be savory and satisfying. And when you unite meatloaf with classic barbecue smoking techniques, it can be downright sublime.
Such is the slice o’ loaf at Salt Lake City’s Pat’s Barbecue.
Pat’s is a bluesy music-filled, fun, good grub place with Real Deal McCoy ribs, pulled pork, chicken and beef brisket.
