So Good: Pat’s Smokey BBQ Meatloaf
Meatloaf gets short shrift.
It might be quickly assembled and conveniently cooked, but it can be savory and satisfying. And when you unite meatloaf with classic barbecue smoking techniques, it can be downright sublime.
Such is the slice o’ loaf at Salt Lake City’s Pat’s Barbecue.
Pat’s is a bluesy music-filled, fun, good grub place with Real Deal McCoy ribs, pulled pork, chicken and beef brisket.
But on Wednesdays during lunch, it’s the smoked BBQ meatloaf special that brings in droves of folks.
Imagine the moistest, flavor-most-est segments of meatloaf infused with fragrant smoke then finished off with tangy sauce.
Now envision those hearty pieces next to a couple of sides including:
- Cole Slaw
- Potato Salad
- Baked Beans
- Mustard Greens
- Red Beans and Rice
- Meaty Gravy and Rice
- Mashed Potatoes and Gravy
Holy Moly and Holy Smokes! Damn, that is an amazing meatloaf meal.
Pat’s Barbeque has been featured on the Food Network’s Diners, Drive-Ins & Dives.
When in SLCitay, UT, do by all means eat at Pat’s Barbeque, even if it’s not on a Wednesday at lunch.
